Mofongo Recipe

Mofongo Recipe

Ingredients

3 Green Plantains
2 large pork rinds
4 Cloves garlic
Vegetable oil
Salt & Pepper to taste

Peel plantains by cutting off ends, make a slit on skin and pull off with fingers.
Cut in halves, brush with some oil and put each part on aluminum foil, (like you would do with a baked potato). Bake at 350 degrees for about 35 minutes or so, until tender when you poke with a fork.
Grind or mash plantains with pork rinds that have been cut in small pieces.
In a large skillet, heat 1/8 cup of oil, sauté mashed garlic (careful do not let it burn!),
Add mixture of plantains and pork rinds, and mix it all well, add salt and pepper to taste.

Serve in a Mortar with a cup of meat consume to drizzle over the Mofongo.

Traditional Mofongo is made with fried green plantains, but I follow my mother’s recipe for a healthier version. Less calories, less guilt!
