Here we go....

I love to cook. I especially like to cook recipes from my native country (Dominican Republic). We have a mix of influences from Spain, the Middle East, and the US. This mix of cultures makes for some really great and tasty recipes.

One of my favorite food from home is Mofongo. Right now you are wondering, what is this? Mofongo is green plantains (fancy banana) with fried pork rinds. This is a lot like mashed potatoes with bacon and cheese mixed in, but in this case the potatoes are the plantains and the pork rinds are like the bacon. Also mixed in is sofrito. Sofrito is made up of onions and garlic.

The Mofongo is served in a wood mortar (like mortar and pestle). With a special meat consume'.

In my country it is customary to go to a local restaurant in the wee hours of the night after dancing and have Mofongo. Ask for Carmen Virginia and tell her that Angie sent you.

If you are ever in Santo Domingo, visit Lincoln Road Resturaunt and try their Monfongo, it is one of the best.
